Hi, Jonel, thanks so much for inviting me to your blog and allowing me to share some of the things I love. We can all safely assume I love writing or I wouldn’t be here. However, I’m also passionate about music and the military, which made writing my debut novel, Drive Me Sane, such a joy.
This time of year also gives me the opportunity to do something else I love, which is baking. I much prefer to spend my time slaving over the end of the meal versus the stuff we get in the beginning. Because really, who say’s “I’m going to make sure I save room for some of those mashed potatoes?” It’s all about the desserts.
I have no idea what age I started baking, but I do know it was too young to be handling an oven by myself. There were many occasions when my mom would come into the kitchen shrieking with fear when she found me up before anyone else and taking a masterpiece out of the oven. Cookbooks were my early reading source. I’d pour through the pages until I found something we had all the ingredients for and then dive in. It was during one of those early morning adventures that I misread 1 ½ tsp of salt for 1 ½ cups. I can’t remember exactly what I was making, but I can still see my mother’s face pinch together as she said, “It’s good, but a little less salt next time.”
I still enjoy reading recipes. Sometimes I get lost in them just like I do when reading a book or while I’m writing. But I think that comes with anything you love.
Here is one of my favorite fudge recipes. It’s super easy and something that anyone can make. I’ve seen a variation of names for it, but I stick to simple and call it “White Fudge.”
1 pkg. white chocolate morsels
1 16 oz container prepared vanilla frosting
Melt 1 pkg. white chocolate morsels in microwave.
½ tsp. butter extract
¼ tsp. salt
Melt morsels in microwave according to pkg. directions. Add vanilla frosting, butter extract and salt. Microwave an additional 90 seconds, or until smooth. Pour into 8 x 8 foil lined pan (very important that you line in foil otherwise it tends not to set up correctly.) Stick in fridge until firm (couple of hours). Take out of refrigerator and turn onto cutting board. Cut into squares.

Dena grew up in Central Texas, but has lived in the foothills of Kentucky, with her husband and two sons, long enough to consider it home. She enjoys taking road trips with her family and watching her husband race at one of the local dirt tracks.
